Nasi Kuning


I had nasi kuning (yellow rice) again yesterday and today. Count me lucky, two Indonesian friends decided to cook nasi kuning for me yesterday after talking to them about how great Indonesia's food was the night before. I have the recipe here with me. The only problem is that they couldn't tell how much of the ingredients you'll need because they use the 'look and feel' method to determine how much they need. Here it is:
Nasi Kuning

1. Rice (best if straight from the paddy field)
2. Tumeric (freshly grounded or blended)
3. Shallots
4. Chicken stock
5. Garlic
6. Salt
7. Coconut milk
8. Star anise (optional)
9. Saffron (optional)

Sauteed the garlic in heated oil. Add in shallots and when brownish, add in the grounded tumeric. If using star anise and saffron, add them in now. Pour in some water and put in chicken stock. Add in salt and finally coconut milk. The coconut milk should be enough to cook the rice. When it starts to boil, add in rice. Or you may put rice in rice cooker and transfer the boiling ingredients into the rice cooker.
